RED VELVET CAKE

Was it invented at the Waldorf-Astoria Hotel in New York City? Was it invented in the South? Was it invented in Canada? Where, and when?


A Red velvet cake is a cake with a dark red, bright red or red-brown color. It is usually prepared as a layer cake with either a vanilla or chocolate flavor, topped with a creamy white icing. Common ingredients are buttermilk, butter, flour, cocoa, and beetroot or red food coloring (beetroot is traditionally used). The amount of cocoa used varies in different recipes. Cream cheese frosting is most commonly paired with the cake, as well as buttercream

HISTORY
The cake shows up in newspaper recipes from at least 1959. In 1961, one Canadian newspaper advertised the “new” Red Velvet Cake available at Eaton’s.
 Promoted as an exclusive Eaton's recipe, with employees who knew the recipe sworn to silence, many mistakenly believed the cake to be the invention of the department store matriarch, Lady Eaton




RED VELVET ON FILM
A red velvet cake was featured in the 1989 film Steel Magnolias, which led to a great resurgence of Southerners recreating the recipe for themselves. The armadillo-shaped red velvet cake served as a groom's cake for one of the film's main character.
Red velvet cake frosting is typically a white, creamy color, which serves as a dramatic contrast to the color of the actual cake. Although the types can vary, many stick with a traditional cream cheese frosting. Others might opt for a buttercream frosting which will also do the trick.
